Almond Bars for Christmas

Being the child of immigrants from the Netherlands – almond is one of the flavors that remind me of childhood and Christmas –  I have several favorite almond cookies and pastry recipes – some of them take hours to prepare and I didn’t think you would want to spend that much time in the kitchen this week.  This one doesn’t take long, it doubles easily, freezes well and, best of all, looks and tastes delicious.  I got this recipe from Barefoot in the Kitchen.

ALMOND BARSAlmond Bars
Main ingredients:
  • 1 cup sugar
  • 1/2 cup butter, room temperature
  • 1 egg, room temperature
  • 1/2 teaspoon almond extract
  • 1 3/4 cups all purpose flour
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt

Topping:

  • 1 tbsp milk
  • 1/2 cup sliced almonds
Icing:
  • 1 cup powdered sugar
  • 1/4 tsp almond extract
  • 1-2 tbsp milk

Instructions

Preheat the oven to 325 degrees. Mix flour, baking powder and salt and set aside. In a seperate dish, cream butter and the sugar. Add the egg and the almond extract, mix until light and fluffy. Slowly add the flour mixture to the butter mixture. Mix well.

Press the dough into the bottom of a buttered 9″ x 13″ pan.  Use a pastry brush to brush a small amount of milk on the dough. Sprinkle with sliced almonds and lightly press into the top of the dough.

Bake for 18-20 min, or until beginning to brown around the edges. Don’t let them brown to much.

Cool for 5 minutes and then cut into bars (1″ x 2″). Carefully move each bar to a wire rack to cool completely.

When completely cool, prepare the icing, adding just a tiny bit of milk at a time. Drizzle over entire batch.
